Jicama Fries--low cal & nutrient dense snack!

Today is Day 1 of the Whole 30 (strict Paleo) so I decided to try something new and fun as an afternoon snack for my fiancé and I-- Jicama Fries!! If you're a fast food junkie you could easily replace those greasy fries with these yummy low cal, nutrient dense "fries" :)



Ingredients
  1. 1  Medium Jicama
  2. 1/2-1 Tablespoon melted coconut oil
  3. Salt and pepper, to taste
  4. Paprika (optional)
Instructions
  1. Preheat oven to 400.
  2. Peel jicama with a potato skinner, or with a knife.
  3. Chop top and bottom off jicama, and cut into fries.
  4. Place fries on a cookie sheet, and drizzle with coconut oil. Top with salt, pepper, and paprika.
  5. Bake for 20-25 minutes, or until desired crispiness!
